I look at my recipes and photos saved on my computer and I'm amazed myself at how I managed to collect so many. I only cook on weekends, and still I've piled up material for lots of posts. The days are just too short and there's never enough time. Still, I'm happy about every post that turns out well and about every comment from you!
Today I'm recommending a yeast cake that my mom used to make me and my family very happy. It's a beautiful, fluffy cake that disappears in no time. The tastiest, simplest kind, with plums and lots of streusel. My mom made it in her Thermomix (the recipe comes from the Thermomix book), which goes lightning fast. But I'm giving you the traditional method.
Plum yeast cake
Directions - Plum Yeast Cake:
Crumble the yeast into a bowl, sprinkle it with a tablespoon of sugar and pour 2 tbsp of milk over it. Stir and set aside in a warm place so the yeast can get going. Cream the sugar, vanilla sugar and egg yolks until fluffy. Add the cooled butter and mix, then add the flour, a pinch of salt and the yeast, and knead until the dough starts to pull away from your hands or the sides of the bowl. Cover with a kitchen towel and set aside in a warm place to rise. The dough should double in size. Transfer the dough to a baking pan lined with parchment paper, about 20×30 cm. Cut the plums in half and arrange them cut side up on the dough. I like to sprinkle the plums with a little cinnamon, too.
Preheat the oven to 180°C (355°F).
Make the streusel: Slowly melt the butter in a skillet, add the sugar and stir. Add the flour and stir again. Add more sugar or flour if needed. The streusel should be crumbly. Sprinkle the streusel over the cake. Place in the oven and bake for about 50 minutes.
Enjoy!
