These are very delicate cookies with an orange flavor. Of course, you can also make them in a lemon version. I didn't have any oranges, so I used tangerine juice mixed with lemon juice and lemon zest. They smell fantastic.
When choosing the marmalade, I don't recommend one with orange peel in it, because that kind of marmalade tastes a little bitter. Mine unfortunately had peel, and the bitter taste is too dominant. Still, these cookies are worth making.

Orange piped cookies
Ingredients:
- 200 g butter
- 100 g sugar
- 4 egg yolks
- 100 g marzipan, grated or mashed
- juice of 1 orange
- 1 packet orange flavoring (about 10 g)
- 1 small bottle orange peel flavoring
- 260 g all-purpose flour
- 1 jar orange marmalade or jelly
- dark chocolate coating, optional
Preheat the oven to 200°C (390°F).
Beat the butter with the sugar until light and fluffy. Add the egg yolks one at a time, then the marzipan. Add the orange flavorings, and finally the flour. Put the dough into a piping bag and pipe the cookies straight onto a baking sheet lined with parchment paper. You can use any tip you like. I happened to try several, and the easiest one to pipe with was the tip with a wavy, elongated opening.
Bake for 10-15 minutes. Once the cookies have baked and cooled, spread marmalade on the bottom of one cookie and stick a second one to it. Set aside to dry. You can decorate them with chocolate coating or dip the ends of the cookies in it.
