Like I wrote recently, my younger daughter had her birthday yesterday. I don't know where the time goes. I can't believe 3 years have already passed.
Gabriela is a big fan of the cartoon "Little Einsteins," and when I asked her what kind of cake she wanted for her birthday, the answer was "Little Einsteins, strawberry flavored." The answer was so specific that I had no choice but to make her wish come true. The cake tasted great, and it wasn't only the birthday girl who loved it.
Little Einsteins Cake
There won't be a cake recipe today, though, because I didn't create anything new. Still, this post might serve as inspiration.
The cake wasn't big. I used a 24 cm square pan. I baked a chocolate sponge cake using the recipe for the cream and chocolate cake. It gave me 2 thin layers. If you want a taller cake, I suggest baking 2 sponge layers right away and not cutting them in half, or cutting them into 4 thin layers.
I spread the sponge with low-sugar strawberry jam and filled it once with a thicker layer of strawberry mascarpone cream, in the egg-free version. I spread the second layer with the cream only lightly, because I put a layer of fondant on top. The rocket figure is also made of fondant. Unfortunately, I ran out of skills for making the Einstein figures ;)

If anyone likes the idea, I'm happy to help if you have any questions.
I hope my child will remember today, because it was full of excitement. And the cake... oh, it was good :)

The cake is gorgeous :) This year I'm going to have to make something like this too, wow, for my little niece's birthday :)
Which birthday is your niece going to have? Do you already have an idea for her cake? I hope you'll show it off :)
Beautiful cake!!! Unfortunately I don't have that artistic touch with cakes, so I'll have to force someone to bake a rocket with little Einsteins! It's divine. Congratulations!
Thank you :) The cake is less complicated than it looks. The rocket is made only of fondant and is just a decoration (shaped like play dough ;)) The cake itself, meaning the edible part, is the base under the rocket, and it's square, so it shouldn't be a problem to make.
Hi, Your rocket cake charmed me so much that I decided to show it to my husband's godmother, and her reaction was one: "Auntie, pretty please, will you make me a cake like this for my birthday..." I couldn't say no, so I have a challenge on May 13, and I also have a request: could I ask for photos of the rocket from the side and from the back? Did you have to put some kind of support under the rocket, or is it not too heavy? I mean, will it not sink into the cake?
Hi :) Oh, I'm so glad the cake made such an impression :) Unfortunately I don't have photos of the rocket from the back or the side, because with all the commotion there was no chance to take them properly :( Though I'll keep looking and get back to you. The back of the rocket looks the same as the front, just without the lamps. I didn't put any support under the rocket. Instead, I made a flat sponge and layered the cake only once, so it wasn't too tall. I prepared the rocket ahead of time and placed it on the cake right before serving, so there was no way it could sink. Besides, the cake sat on the table for a while and nothing happened. The cake should be well chilled beforehand, though. If you have any more questions, I'm happy to help :)
I baked the cake :) I'm shaping the rocket, and we made candles out of the little paper Einsteins – we needed exactly 4 ;) All that's left of the cake is a lovely memory and photos. Once again, thank you so much for posting the photos on the blog ;) Warm regards
I'm hugely impressed!!!! This is exactly the kind of inspiration I was looking for!!!!! The cake looks amazing! My little daughter Alicja turns 3 in two weeks and she also dreamed of a cake with her favorite red rocket. She loves Little Einsteins :) I have a technical question. While I can handle the sponge cakes and fillings without any problem, I'll be working with fondant for the first time. Could you please advise how much fondant I should buy? And when should I make the rocket?
I'm so glad you like the cake. As far as I remember, I used about 1 kg of fondant to cover the cake, maybe a little more. A piece is needed for making the balls. For the rocket, another 1/2 kg. I used white fondant and colored it myself with gel food coloring to get the colors I wanted. The rocket can be made even several days ahead and kept in a cool but dry place. It will be sturdier if you add CMC to the fondant. You'll definitely use about 2 kg of fondant, which also depends on the size of the cake and the rocket. I wish you a successful cake and a happy birthday girl!
