Lentils with Spinach

Lentils with spinach is a vegetarian one-pot meal. With kopytki (potato dumplings) it's a great dinner, with bread a perfect supper.

I had a nice weekend. Calm and lazy, but I like days like that. Hopefully not too many of them, of course. I spent my birthday with my family, without a cake, but with dinner at a cute restaurant, ice cream and a bike ride. I hope the weather was good for you, too.

Before I get to the recipe, a few words about a new tab on the blog. At the very top of the page you can now find the tab "Recipes from A to Z." As the name says, it's an index of all the posts on the blog. There are already 517 of them! I can hardly believe it myself.

Lentils with spinach

Today I'm offering you a tasty Eintopf, that is, a one-pot meal. We really liked the lentils with spinach prepared this way. It's perfect as a supper dish, and served with, for example, kopytki (Polish potato dumplings), it makes a wonderful dinner. On top of that, it's a healthy dish that you don't have to feel guilty about. Well, you do have to be a little careful with those kopytki. Lentils are rich in fiber and plant-based protein. I think everybody knows spinach. I recommend it.

My kids preferred this dish blended, as a sauce for kopytki.

Instructions – lentils with spinach:

Peel and finely chop the onion and garlic. Heat the oil in a pot and sauté the onion and garlic, then add the tomatoes and bring to a boil. Add the lentils, cover and cook for about 5 minutes, then add the spinach, pour in the broth and cook for about 10 minutes. Check from time to time so the lentils don't get overcooked. When they're soft, add the cream and season with salt and pepper. The dish is ready. Serve on its own or with kopytki.

Enjoy!

Sounds really good, kind of like dhal, just without the exotic spices :)
