Fruity Risotto with Chocolate

A delicate fruity risotto with chocolate, Riesling, milk, honey, kiwi, pomegranate and papaya: a light dessert for the Chocolate Weekend.

fruity risotto with chocolate

While searching for recipes for dishes I could make for the Chocolate Weekend, I had quite a problem. There are so many recipes, so many delicious things, so much chocolate… For today's dessert I didn't want to make anything heavy, I needed something delicate. I settled on this risotto. It's delicate and surprising in flavor. Wine, chocolate, fruit… Perfect! Just please forgive my caramel decorations. I made them for the first time and had a few problems with them. Still, everything tasted great.

The recipe comes from Joseph "Józek" Seeletso, known from the TV show Dzień Dobry TVN (a Polish morning show). I'm quoting the ingredients from the original recipe, because I made it exactly the same way.

As I already mentioned, I'm submitting this recipe to the Chocolate Weekend event.

Ingredients:

  • 1 cup risotto rice
  • 1 glass German Riesling wine
  • 2 cups milk
  • 1 cinnamon stick
  • 1 star anise
  • 100 g grated chocolate
  • 4 tbsp honey
  • 1 peeled kiwi
  • 4 tbsp pomegranate seeds
  • papaya balls

Cook the rice until al dente, pour in the wine, add the cinnamon and star anise, and cook, stirring constantly, until the wine has reduced. Pour in the milk and cook until the rice is tender. Add the honey and, at the end, the chocolate. Stir well, transfer to small bowls, decorate with the fruit and serve.
