Fried (Green) Tomatoes

Green tomatoes pan-fried in olive oil until lightly browned and served over herbed feta with whole grain bread: a quick, tasty breakfast.

I have to share my discovery. Maybe, or rather surely, it's nothing new for many of you, but it definitely is for me. Even though I had heard about fried green tomatoes a long time ago, I never had the chance to try them.

My dear husband, who goes to the market at least once a week and comes back with wonderful, fragrant groceries, made me happy with a big haul of all kinds of tomatoes. In the bag there were, among other things, green tomatoes with thick skin and firm flesh, which I decided to eat for breakfast.

Making this meal is simple: cut the tomatoes in half, heat some good olive oil in a pan, and fry the tomatoes on both sides until they turn a light brown color.

I placed the tomatoes, prepared this way, on a piece of wonderful feta with herbs and chili from the Greek guy at the market, and ate it all with a piece of fresh whole grain bread. Yum!

Because feta is both salty and coated in herbs, I didn't use any seasoning on the tomatoes. Otherwise, I would add salt, pepper, and herbs (oregano, basil) to the hot olive oil.

Enjoy!
