According to Irena and Andrzej, the original name of this dish was "sea bass with oregano and chorizo," and I think calling it a pizza captures its character better. Layering cheese, chorizo and tomatoes on top of fish is, in my opinion, a great way to liven up a fish dish. On top of that, it's tasty and quick to make. I used sea bass, but I think you can use any fish that won't fall apart during baking. My twist was using sun-dried tomatoes instead of fresh ones. I also poured canned tomatoes over everything and baked the fish that way. I served the fish with celery root pancakes.
I highly recommend it!
fish a la pizza
Directions:
Season the fish with salt and pepper, then arrange chorizo slices, tomatoes, cheese and garlic on top and sprinkle with oregano. Drizzle everything with butter, optionally pour canned tomatoes over it, and bake for about 15 minutes. While baking, baste the fish with wine. Serve sprinkled with fresh parsley.
Enjoy!
