This is one of my favorite ways to cook fish. Fish prepared like this comes out tender and aromatic. I served it on arugula and toast. It also goes very well with potatoes, preferably roasted.
I got the idea from Kwestia Smaku, but I made quite a lot of changes, so basically it turned into a completely new dish.
cod in tomatoes
Ingredients:
- 2 portions of fish (I used cod cut into steaks, but fillets are fine)
- 1 can of tomatoes (400 g)
- 3 sun-dried tomatoes
- 1 onion
- half a zucchini
- 1 tsp brown sugar
- 1 tbsp soy sauce
- 3 sprigs of fresh thyme
- olive oil
Heat the olive oil in a skillet, add the diced onion, then the diced zucchini and sun-dried tomatoes. Sauté for a moment, then simmer for about 5 minutes. Add the canned tomatoes, brown sugar, soy sauce and thyme leaves. Cook over low heat for about 5 minutes. Lightly season the fish with salt and pepper, place it in the sauce and cook for about 10-20 minutes (less if it's a fillet; steaks take about 20 minutes).
Serve with just the sauce, or with salad and potatoes or toast.
Enjoy!

tasty fish :)
Beautifully presented. Even someone like me, who's (kind of) a picky eater when it comes to fish, would be delighted by this version and would eat it with gusto
Thank you, that's so nice of you :)
