Actually, it's not really a baba. It's a chocolate marvel! A wonderful, deeply chocolatey cake, perfect for any occasion, holiday or everyday.

Ingredients

Actually, it's not really a baba (a tall, fluted traditional Polish cake). It's a chocolate marvel! I probably won't write much about this wonder. You just have to try it yourself. Creating marvels isn't hard at all. I highly recommend it.

The recipe is by bajaderka.

Instructions:

Prepare the pan and preheat the oven to 180°C (350°F).
First, beat the butter and sugar until fluffy, then add the egg yolks one at a time, beating continuously. Gradually add the cold tea. Sift together the flour, baking powder and cocoa, add the nuts and breadcrumbs, and mix everything together. Add this to the butter mixture and mix gently until the mixtures are combined.
Beat the egg whites until stiff peaks form and gently fold them into the batter. Then pour everything into the pan and bake for about 50-70 minutes. It's best to check after about 50 minutes with a toothpick to see if the cake is done – the toothpick should come out dry. Leave the baked cake in the pan for another 15-20 minutes or so, then turn it out onto a wire rack to cool completely.

Enjoy!

Delicious, delicious, delicious… A chocolate marvel I don't have such a pretty pan, so I baked it in a loaf pan. It baked for 70 minutes. I recommend it, it's delicious with coffee

    So pretty.. really a marvel.

Where did you buy such a pan?

  • flowerekAuthor

Oh, the pan is pretty old by now. I don't remember exactly, but I suspect I bought it on Amazon. It's silicone.

  • Dagmara

I found a pan like that :) it's 21.5 cm in diameter and 9.5 cm tall. Will those dimensions be enough for this babka?

  • flowerekAuthor

It'll be perfect. Mine is 22x10 cm.

Do you have a tried-and-true recipe for the glaze for this babka? Or should I rather buy a ready-made one?

  • flowerekAuthor

Here I just poured melted dark chocolate over the babka, but you can also make a chocolate glaze by heating 2-3 spoonfuls of water in a small pot. Then add 2 heaping spoonfuls of cocoa, 3/4 of a stick of butter and a little over half a cup of sugar. You can also add a few drops of flavoring or, instead of a spoonful of water, your favorite alcohol. Heat it all, stirring, until the ingredients combine. But don't heat it too much or for too long, so the glaze doesn't harden. Pour it on right away.

Thank you. I already have that pan and I'll be baking on Saturday :)

Hi, I wanted to ask whether the recipe means a stick of butter of 250 g or 200 g. Best wishes, and Merry Christmas ;-)

  • flowerekAuthor

It means a 250 g stick. I'm correcting it in the recipe right now. Merry Christmas to you too :)
