Beet Salad by M. Kuroń

Ingredients

This salad is perfect for Christmas Eve, the other holiday days, and any other occasion. It's a great side dish and complement to the fish dishes that, after all, reign over the holiday table. I think far too few salads and vegetables in general get served at Christmas, and they're exactly what I always miss.

So today I'm sharing a tasty beet salad that appears in the Gazeta Wyborcza supplement "Dishes for Christmas Eve and the Holidays" by M. Kuroń under the title "My Favorite Beet Salad."

Made with only yogurt and no sugar, it's also suitable for phase 2 of the Dukan diet.

I made this salad with ¼ of the recipe and added 1 clove of garlic. That was enough for me. If you're not a big fan of garlic, I recommend adding it gradually, because I think you can taste it in this salad quite clearly, but it's still essential here.

Instructions:

Roast or boil the beets, let them cool, and peel them. Then cut them into cubes or slices. I used beets that were already cooked and peeled, and I grated them on the large holes of a box grater.

Next, add the lemon juice and season with sugar, salt, and pepper. Finally, add the garlic, mayonnaise, and yogurt. Mix well and serve.

Enjoy!
