No, I don't know them from my childhood, so I don't look back on them fondly, as so many recipes like to say. I don't know if I simply didn't like them as a kid, or if my parents just never bought them.
Baletki aka Bitki (small poppy seed cookies sandwiched with jam)
But I discovered them recently and I really loved them. They are super tasty, light, delicate and very, and I mean very, addictive. I especially love that lightly baked poppy seed topping :)
I decided to experiment a little with baletki aka bitki, and the second time I replaced 5 g of the flour with loose, dark cocoa powder. I recommend it!
Baletki aka Bitki
How to Make Baletki aka Bitki:
Preheat the oven to 180°C (350°F) and line two baking sheets with parchment paper.
Separate the egg whites from the yolks. Beat the whites until stiff (you should be able to slice through them) and, mixing the whole time, gradually add the sugar. Still mixing, add the eggs one at a time, and at the very end gently fold in the flour, adding it in small portions.
Transfer the batter to a piping bag and, using a tip with a large opening, pipe small rounds onto the baking sheet (about 2-3 cm in diameter). The spaces between them don't have to be big. Sprinkle with poppy seeds and bake for about 10 minutes. Carefully remove them from the baking sheet, helping yourself with a knife, and let them cool. Then spread half of them with jam. Top each cookie with jam with another one and press together lightly.
Enjoy!
