Yum, yum, yum! That's all I heard from the people eating this cake, along with requests for more. Everyone ate a slice, then right away a second, bigger one, and just like that the cake was gone. I haven't made a cake in a long time that disappeared this fast. That's why I dared to call it the most delicious. It deserves it. In fact, not only is it the most delicious, it's also very easy to make and versatile, because I think just about any fruit goes with it. I really recommend it!

The most delicious butter cake with fruit
The recipe is my own, experimental – which makes me even happier with the result :)

The most delicious butter cake with fruit
Instructions:
Cream the butter, sugar and vanilla sugar until fluffy, then add the eggs one at a time, beating each one for about 1 minute, and keep beating until the sugar dissolves completely. Add the yogurt and mix, then add the flour mixed with the pudding mix and baking powder, and gently fold it in.
Preheat the oven to 180°C (350°F).
Grease a pan, preferably a springform one, with butter and dust it with flour. Cut each apricot into 8 pieces. Pour half of the batter into the pan, arrange half of the fruit on top, and pour in the rest of the batter. Arrange the remaining fruit on top.
Make the streusel:
Melt the butter. Mix the flour with the sugar and vanilla sugar, add the butter and mix until crumbs form. If needed, add a bit more flour and sugar. Sprinkle the streusel over the cake. Bake for about 50 minutes on the second rack from the bottom, then turn off the oven and leave the cake inside for about 5 more minutes. Take it out of the oven, wait another 5 minutes until it cools down a little, then turn it out onto a wire rack to cool completely. Note: the cake is delicate, and if there's a lot of fruit it may fall apart a bit.
Enjoy!
Additional notes:
I made it in a loaf pan, but I had trouble getting the cake out onto the rack, so I recommend either a hinged loaf pan or a springform pan.

With fruit and crumble topping it's definitely delicious!
Oh yes. Totally agree. Crumble and fruit are a perfect match :)
I literally ran to the store to get butter and pudding mix. I'm about to get started. Sure, the heat in the kitchen is a bit of a turn-off, but what wouldn't you do for a culinary experience (read: gluttony) ;-)
You're fast :) Then enjoy, and be sure to write and tell me how it turned out, because I'm really curious :)
I'd like to file a complaint..
I was planning to share the cake at work, but I'm such a greedy guy that I kept it for myself ;-) It's way too good…
I just need to experiment with the pan size, because I made it in a 22 cm springform pan and it rose really high – I had to bake it a quarter of an hour longer. I think next time I'll use a slightly wider pan.
Dear customer, we do not accept complaints :) Baking is at your own risk ;) I'm so happy the cakey-wakey hit the spot. It really does rise beautifully and disappears fast :) Best wishes and thanks for the comment :)
The cake is truly amazing, I bake it every other day, but I have a problem. My crumble doesn't turn out. After mixing it looks great, but when I bake it, it spreads out and merges with the cake. It tastes wonderful, but it doesn't look right. I'm doing something wrong, but what?
I'm so glad the cake tastes good despite the not-so-perfect crumble. Maybe add more sugar to the crumble, or reduce the amount of butter? The unbaked crumble should be lumpy, but dry, and then it shouldn't spread out. You can adjust the consistency with the amount of flour, butter and sugar. I hope it works out next time :)
When I add less butter, it turns out loose and crumbly instead of lumpy. Should the butter be hot or lukewarm? Maybe that's where the mistake is.
I use butter that's almost hot, but just so that I can still make the crumble with my hands.
Thanks, I'll try again, and if it works out I'll let you know.
Please do, because I'm curious myself. Fingers crossed!
I have a question about the baking process itself. I have an electric oven with several settings to choose from. Please give me some advice, because this is my problem, how should I bake it. Temperature 180C, but the top heating element, the bottom one, or both? And with the convection fan on or not? The oven is great, I bake bread in it and it turns out super, but I always have a dilemma about how to bake cakes. And your cake looks wonderful and I want to make it tomorrow. Oh, and one more thing, you write about pudding mix, I understand it's the sugar-free kind :) ?
Best wishes :)
I usually bake cakes with the top and bottom heating elements, without the convection fan. The pudding mix is sugar-free. If you use one with sugar, it's better to reduce the amount of sugar added to the cake a little. Enjoy and best wishes :)
The cake seems really tasty and easy to make :) Can I use frozen fruit or fruit from, say, compote or syrup?
I think frozen fruit is fine, but you should add it still frozen so it releases as little juice as possible. The cake is moist, and wet fruit could make it turn out gummy and underbaked. As for fruit from compote, it's hard for me to say, but I think it's probably not suitable. If you dare to try it and it works, please let me know :)
Maybe this is a silly question, but the pudding mix that I add to the baking powder and flour, should it be cooked normally into pudding, or just the powder from the package? I'm hoping for a quick answer! :)
Should I add the pudding cooked or as powder? :P
As powder.
Phew, thank you so much for the quick answer. And the one I was hoping for! :D
"Ucierać" means... to stir, to mix with a mixer? Surely it doesn't mean to "live together" or to "bowl"? :P
Stir
Basia, tempted by such positive opinions about this cake, I decided to try my hand at baking too, even though baking cakes has never been my strong suit. I have to admit it turned out and it is, or rather was, delicious. I had a few of my Irish friends over today and, what can I say, the cake disappeared faster than the coffee from the cups :). Thank you for this and many other tasty recipes.
I'm so glad I could make you all happy by sharing this recipe :) Thank you for the wonderful words :)
Yesterday I accidentally came across your blog and read recipes up to number 1. The only downside is that I got terribly hungry!!! I once tried to run a food blog myself, but it didn't work out. You have a great site, it makes me want to stay here. Congratulations and I wish you continued success :)
And I'm definitely making this cake today!
But yesterday I got sooo many strawberries delivered that I think I'll try making it with them, we'll see if it works :)
Best wishes!
@Paulina Thank you so much for the kind words. I hope the cake turned out well and encouraged you to try other recipes :)
@slodka, I'm so glad. Thanks for the comment.
I have a question, how many minutes does this cake need to bake?
Bake for about 50 minutes on the second rack from the bottom, then turn off the oven and leave the cake in for about 5 more minutes. Take it out of the oven and wait another 5 minutes until it cools down a bit.
