Spekulas/Spekulatius are traditional German cookies that show up in stores as early as fall, together with other Christmas baked goods (yes, yes, quite early). They absolutely have to be in your Christmas treat boxes.
Please don't go by the pattern on my cookies. My big molds with a Christmas pattern seemed too big to me, and the small ones I only have with "flowery" patterns. Taste-wise, though, they're identical :) Spekulas/Spekulatius are delicate, crisp, light, very aromatic and buttery. Highly recommend.
Spekulas/Spekulatius
If you don't have a mold, just cut the dough into even rectangles.
Instructions - Spekulas/Spekulatius:
Melt the butter and sugar in a pot, stirring until the sugar dissolves, and set aside to cool. Sift the almonds.
Add the egg yolks, a pinch of salt, cinnamon, cloves, cardamom, allspice, flour, potato starch, baking powder, butter flavoring and the almonds to the melted butter mixture and stir to combine. Shape the dough into a ball, wrap it in plastic wrap and refrigerate for about 2 hours.
Preheat the oven to 150°C (300°F).
Roll out the dough thin in small portions, dusting with flour. Place it on the wooden molds and press lightly. Cut off the excess dough, and transfer the dough from the molds onto baking sheets lined with parchment paper. Bake for about 10-15 minutes on the second rack from the bottom. Cool on a wire rack.
Enjoy!

Great cookies. I recently made two versions (one of them with marzipan) and I honestly can't tell which one is better :)
Best wishes.
Both versions are definitely delicious :)
