Ingredients

Pumpkin season has officially started, so here's another recipe using this vegetable. It's yet another soup, this time a classic one, without any "weird" additions. For an even easier version, just cook a broth, add the pumpkin, cook, add cream and blend.

If you like flavor experiments, I encourage you to try this pumpkin cream soup with coconut milk.

If you like pumpkin in sweet dishes, I encourage you to try my recipes for:

pumpkin and chocolate tart

pumpkin yeast bread (it's great!)

and pumpkin boats

and if you're on the Dukan diet, check out this pumpkin cake

The recipe for today's soup comes from the book "Kuchnia Polska" (Polish Cuisine) published by Reader's Digest. If you're looking for the peas in the photo, they're there, but they hid, i.e. sank to the bottom of the bowl ;)

Directions:

Melt 2 tbsp of the butter in a pot and sauté the chopped pumpkin and onion in it. Chop the tomatoes and potatoes (if the potatoes are young, I don't peel them), add them to the pumpkin and pour in 1.2 l of boiling water. Add salt and cook covered for about 30 minutes. Blend, then add the peas and the remaining butter. Ladle into bowls, sprinkle with chives and serve.

Enjoy!

you're making my mouth water, Basia… I really love pumpkin soup!

have you ever made any preserves with pumpkin? a long time ago (maybe even 20 years ago) my grandma made delicious sweet pumpkin pieces in syrup – the taste was amazing!

Tuptusiu, that's my goal, to "make your mouth water" ;) I've eaten pumpkin preserves, but I've never made them myself. I've had pickled pumpkin and jam with some pumpkin in it. They were good :)

I made it for dinner today and didn't add the peas, and the soup was still tasty, I really like pumpkin pickled in vinegar with cloves, a nice side for meat
