Please forgive the skimpy intro to today's dish, but I had a reeeally busy weekend. I got it into my head to rearrange the furniture at home. A quick way to shake things up and lift your mood :) The good news is that the recipe is simple too, and this dish doesn't take much time to make.
This dish tastes great on its own or served with a good fish, e.g. monkfish fried in butter.
The original recipe for monkfish with lentils and zucchini comes from the magazine Lust auf Genuss 8/2011. I left out "just" the monkfish ;)
Directions:
Fry the bacon slices in a pan without any added fat, about 2 minutes per side, until crisp. Take them out of the pan, place them on a paper towel, and break them into smaller pieces.
Peel the shallot and garlic and finely dice them. Dice the smoked bacon as well. Sauté all 3 ingredients in 2 tbsp of olive oil and deglaze with the vinegar. Add the lentils, pour in the broth, and cook for 10 minutes over low heat. In the meantime, wash the zucchini and cut it into small dice. Add it to the lentils and cook for 5 minutes. Add the chopped lovage leaves, season with salt and pepper, and stir.
Enjoy!
