My dears, it's time to start thinking about gingerbread cookies. Do you already know which ones you'll be baking this Christmas? I will definitely be baking [Aganiok pierniczki](https://flowers-recipes.com/aganioks-gingerbread-cookies-pierniczki-aganiok/) (Polish gingerbread cookies). I wait for these goodies all year, and a double batch of dough is already mixed and waiting. If you feel like baking them as much as I do, I'm reminding you that it's really the last call to make the dough. It needs quite a long time to rest and mature, and the baked cookies (I'll be baking mine at the beginning of December) usually need time to soften, too. But they'll reward us with a wonderful aroma and that gingerbread flavor.

[Piernik toruński](https://flowers-recipes.com/toru-gingerbread-piernik-toru-ski/) (Toruń gingerbread) needs to rest as well. Unfortunately, the photo of mine got lost somewhere. I hope I'll manage to make up for that this year.

I'll also certainly come back to [Pepparkakor](https://flowers-recipes.com/pepparkakor/) this year, which I really loved. They don't need a long resting time, but you can make them ahead and enjoy them for a long time.

I'm 200% sure I'll make the Bajaderki marzipan slices this year. They need to rest too, so very soon it will be time to prepare them. I recommend them with all my heart, especially if you like marzipan. If you know the chocolates called "Dominos," you'll like them even more, because they remind me a bit of their flavor.

I will definitely come back to the topic of [Advent cookies](https://flowers-recipes.com/advent/), which make the wait for Christmas more pleasant, and to gingerbread cookies and recipes for them before Christmas. I'm already looking forward to it, because making them and giving them to loved ones is one of the loveliest moments of the (pre-)holiday season.

In the meantime, I'm lighting a candle for all my loved ones who have passed away, and remembering…

I'm so glad I won't be making gingerbread by myself ;)
Ewa, I'll still be making a few batches of other gingerbread cookies. The very ginger gingerbread cookie dough works great for a house http://flowerek.com/wypieki/ciastka/pierniczki-bardzo-imbirowe/
Maggie, you're right, it's time :) Christmas is just around the corner :)

My dough is also sitting there patiently, waiting for its big day!
