- 260 g whole grain spelt flour
- 350 g spelt flour
- 160 g whole grain rye flour

- horseradish leaves

## Instructions

I baked this bread for World Bread Day, but I didn't manage to publish the recipe in time. After that day I made it again, because we liked it so much.

The first time I didn't use horseradish leaves, and the bread was made mostly with whole grain rye flour, so it was quite dense, with few holes.

The second time I placed the bread on horseradish leaves and baked it that way. I never thought a few little leaves could change a bread so much. It took on an incredible aroma and flavor. This time I also reduced the amount of rye flour, and the bread became lighter.

This bread takes a long time to make overall, but you can spread it out over the day so it doesn't get in the way of other things you need to do.

After kneading, the dough should be smooth, slightly sticky, and pull away from the sides of the bowl, but it can't be too dense. If needed, add more water.

While I'm at it, thank you to [dawny\_basiek](http://mozaikazycia.blogspot.de/), thanks to whom I have a wonderful sourdough starter :)

## How to make sourdough bread on horseradish leaves:

Mix the starter ingredients, cover, and set aside in a warm place for at least 12 hours. I make it in the evening and put it in the cold oven.

In the morning I make the dough.

Add all the flours, the salt, the water, and the flaxseed to the starter and knead until the dough starts to pull away from the sides of the bowl or from your hands. Shape it into a ball, cover with a linen towel, and set aside in a warm place for about 2 hours, until it has risen slightly. I put it in an oven heated to 50°C (120°F). After that time, knead the dough again, shape it into a ball, and put it into a proofing basket or onto a baking sheet lightly dusted with flour (in that case, place the dough on the horseradish leaves right away). Cover and set aside to rise for about 2 hours or even longer. The dough should visibly puff up, ideally doubling in volume.

Preheat the oven to 210°C (410°F).

Wash and dry the horseradish leaves and place them on a baking sheet lightly dusted with flour. Put the risen dough on the leaves, score it, and place it in the oven on the second rack from the bottom. Pour ¼ cup of water into the hot oven (onto the bottom or the walls of the oven) and quickly close the door. Bake for about 50 minutes. After 20 minutes, pour in another ¼ cup of water and close the oven again. The bread is done when it sounds hollow (as if it were empty) when you tap the bottom.

Enjoy!
