## Ingredients

- 1 package puff pastry (or phyllo dough)
- 750 g rhubarb
- 5 tbsp brown sugar
- 1 packet vanilla sugar
- 1 container crème fraîche (about 150 ml)
- 200 ml heavy cream
- zest of 1 lemon
- powdered sugar
- 3 tbsp butter
- shredded coconut

## Instructions

No, this is not a typical bread sandwich with a piece of rhubarb laid on top. I probably wouldn't eat something like that (or maybe I would? ;)). This is a quick rhubarb dessert that I spotted on TV recently and changed up a bit (maybe more than a bit). Since you can buy rhubarb on every corner right now, I'm making the most of it. I love it!

You can use either phyllo dough or puff pastry for this dessert.

Rhubarb sandwich

## Instructions - Rhubarb Sandwich:

Preheat the oven to 200°C (390°F).

Melt the butter.

Divide the dough into 8 equal pieces, brush them with the melted butter and sprinkle with powdered sugar. Place in the oven and bake until golden brown. Let cool.

Peel and chop the rhubarb and simmer it in a pot with the sugar until it cooks down completely. Let cool.

Whip the cream until stiff. Mix the crème fraîche with the lemon zest and vanilla sugar, then fold it into the whipped cream.

Toast the shredded coconut in a dry pan until golden.

Place one piece of pastry on a plate, top with some rhubarb and cream, cover with a second piece of pastry and add a bit more rhubarb and cream. Decorate with the toasted coconut and a lemon balm leaf and serve.

Enjoy!
