## Ingredients

## Instructions

I love getting little presents, and I'm so happy that I recently received a few cookie cutters. Thanks to them I could make cookies exactly the way I wanted. Pumpkin cookies can look like a pumpkin, and not like a kitty :)

I won't go overboard praising these cookies, because the fact that they vanished in no time says it best. Of course, the ones sandwiched with cream disappeared the fastest.

They are perfect for fall and Halloween. The ones filled with cream don't last long, though, because they get soft. The ones without cream can sit for a while, if we give them a chance, of course.

Pumpkin cookies

I was inspired by [this](http://www.bbcgoodfood.com/recipes/1475/orange-pumpkin-face-cookies) recipe, but I made a few changes of my own. I wanted cookies that not only look like a pumpkin, but also taste like pumpkin. Try them yourselves :)

Oh, and one more thing… you have no idea how happy I am that Advent and the holidays are coming. Do you know why? [I'll be baking cookies again](https://flowers-recipes.com/cookie-advent-challenge/) in big batches and giving them away to everyone around me. I love that so much, and I'm already looking forward to it :)

I'm adding this recipe to my [Halloween recipes](https://flowers-recipes.com/halloween-recipes-and-halloween-almond-cookies/), and it's also going to Bea's pumpkin festival.

And tomorrow it's back to work after a week of vacation :(

## Directions – pumpkin cookies:

Preheat the oven to 160°C (320°F).

Cream the butter until soft, add the flour, powdered sugar and orange zest, and keep mixing until everything is well combined. Shape the dough into a ball (it may be a little sticky), wrap it in plastic wrap and refrigerate for about 1 hour.

Once the dough is chilled, roll it out on a lightly floured surface to a thickness of about 3 mm and cut out cookies with cookie cutters.

Place the cookies on a baking sheet lined with parchment paper and bake for about 15 minutes, until they turn slightly golden. Transfer them to a wire rack to cool.

Meanwhile, prepare the cream:

Mix the mascarpone with the pumpkin puree, sugar and cocoa until smooth. When the cookies have cooled, spread cream on half of the cookies, top with the remaining cookies and press down gently (carefully, because the cookies are fragile).

Enjoy!
