Fall, chilly, dark, sometimes just plain unpleasant... more and more often I spend my evenings with a mug of hot tea, sitting under a warm blanket. It's just nicer and cozier that way :) My food is getting warmer and more caloric too (oh, the horror!), because that kind of food (at least that's my impression) is exactly what warms me up and makes me happy.

For me, fall is also the time for potatoes and parsnips, and I still have plenty of parsnips in my garden, so I take advantage and add them wherever I can :)

Potato bake with parsnip and kohlrabi

You can find more parsnip recipes here, too.

I just remembered that I haven't eaten Brussels sprouts in a long time... I guess it's their turn too, but that's for another time.

The potato bake I'm recommending today is, for me, a way to mix things up from plain old potatoes. It has a delicate flavor and goes wonderfully with any meats that have a bold flavor, as well as with fish. Of course, you can also eat it as a main dish on its own.

It's also fairly flexible when it comes to ingredients. You can add carrots, sweet potatoes, or celeriac. As for the potatoes, I try not to peel them, and I didn't peel them here either. If the potatoes aren't very old, I don't mind the skin, and it gives the bake some extra charm.

## How to make potato bake with parsnip and kohlrabi:

Preheat the oven to 190°C (375°F).

Grease a baking dish with fat. Wash and scrub the vegetables well, or peel them if you prefer, and then cut them into very thin slices. Arrange them in the dish in alternating layers, overlapping them like roof tiles, seasoning each layer and sprinkling it with scallions. Mix the milk and cream and pour it over the vegetables. Bake for about 30 minutes on the middle rack of the oven.

After that time, put the cashews on top and bake for another 20 minutes. Take it out of the oven and serve.

Enjoy!
