## Ingredients

- 2 pork tenderloins, 300 g each
- ½ tsp oregano
- ½ tsp salt
- ½ tsp thyme
- ¼ tsp black pepper
- ¼ tsp red pepper (I used a mixed peppercorn blend)

**For the sauce:**

- ½ cup apricots in syrup, chopped
- 1 tsp chopped ginger
- 1 tbsp wine vinegar
- ¼ tsp dried thyme

## Instructions

Lately it has just worked out that I eat meat mostly on the weekend. I don't mind it at all, and I actually like it, because for some time now I've been thinking about giving up meat completely. But I'm probably too weak for that. I like meat too much. The only thing I can do right now is cut back on it. At least my weekend dishes are special and celebrated. And how good they taste!

Combining meat with fruit doesn't always work for me, but this time I really liked it. Apricots add freshness and a lightly sweet flavor to the tenderloins. If you're out of ideas for Sunday dinner, I highly recommend this one.

pork tenderloin with apricots

My mom sent me this recipe. I don't know who created it, though.

**Directions:**

Mix the spices and rub them well into the tenderloins, then put the meat in the refrigerator for at least 1 hour.

After that time, put the meat in the oven and bake for about 30 minutes at 200°C (400°F).

To make the sauce, combine all the ingredients in a saucepan and cook over low heat for 2-3 minutes, stirring constantly.

Pour the sauce over the roasted meat and slice it, or spoon the sauce over the meat on the plate.

Additional notes:

I served the tenderloins with mashed potatoes and green salad.

The tenderloins can also be made on the grill.

Enjoy!

that must be an interesting taste… and I was just wondering recently how to cook pork tenderloin in a nice way :) thanks for the idea!

You're very welcome :) The flavor really is interesting, but the sweetness of the fruit (for me, anyway) isn't dominant. The tenderloins came out nice and tender :) Hugs :)

Can you use peaches instead of apricots?

Yes, you can, although peaches seem sweeter to me.
