## Ingredients

- 800 g potatoes (the kind that fall apart when cooked)
- salt
- 1 garlic clove
- 5 tbsp canola oil
- 50 g butter
- 200 ml milk
- 2 pinches of saffron (2 threads)
- 4 bone-in pork chops
- pepper
- 1 head of garlic
- 2 sprigs rosemary
- 4 sprigs lemon thyme

## Instructions

I remember Sunday dinners at home: chicken soup, pork chops and potatoes. Since I've been on my own, I've made pork chops only once, because they seemed boring and uninteresting to me, and so traditional. Don't get me wrong, I have nothing against tradition, but I don't make some typically Polish dishes because they are considered old-fashioned, boring and often unhealthy.

Pork chops with saffron mashed potatoes

I changed my mind recently, when I saw a few chop recipes in the magazine "Lust auf Genuss". Among them were pork chops that looked like "ours" (Polish-style schabowe), but without the breading and not a bit boring. I decided to combine two recipes, and that's how this interesting, tasty dish came about. As for the sides, I recommend choosing whatever you like :)

## Directions - pork chops with saffron mashed potatoes:

Peel and cut the potatoes and cook them until soft. Drain them, let them steam dry, and press them through a potato ricer twice.

Meanwhile, peel and finely chop the garlic, then sauté it in 2 tbsp of the oil. Add the milk, butter and saffron, bring it to a boil for literally just a moment, and mix it into the potatoes.

Rinse the meat and pat it dry, then season with salt and pepper. Cut the head of garlic in half and sauté both halves (unpeeled) in 3 tbsp of oil. Place the chops, rosemary and thyme in the pan and fry for about 3 minutes on each side. Put the meat on a warm plate and let it "rest". In the meantime, season the mashed potatoes with salt and pepper and serve them with the chops.

Enjoy!
