## Ingredients

- 450 g plums (or apples and bananas)
- 1 egg
- 110 ml whole milk
- 70 g all-purpose flour
- 1 level tsp baking powder
- flour for coating
- sugar (powdered) with cinnamon
- vanilla ice cream

## Instructions

There was supposed to be a different recipe today, but unfortunately the duties of a mom of two preschoolers effectively kept me from putting together a long post. Lately I just don't have much time, and everything has to be made fast. Even sleep is fast… and short :( Maybe someday that will end. Actually, I like being busy. I don't have time to get bored, and there's always a little time for kitchen experiments.

Plums in Batter with Vanilla Ice Cream

This time it was an experiment, too. Of course, my craving for something sweet had to be satisfied quickly. There was no time for a cake, and there was nothing special in the house. But there were plums, apples and bananas, milk, flour, eggs and vanilla ice cream. And so a dessert was born.

I won't be praising this dessert to the skies. It's nothing particularly special, nothing worthy of Michelin stars. But it is a quick way to satisfy a sweet tooth.

I'm curious whether you like ideas like this, and what your tricks are when you suddenly get a craving for something sweet?

**Directions:**

Beat the egg yolk with sugar, then mix in the milk, flour and baking powder. Beat the egg white and gently fold it into the yolk mixture. Set aside for a moment.

Meanwhile, wash, peel, and cut/pit the fruit. Cut the plums in half, cut the apples into eighths, and cut the bananas into pieces that are easy to eat in one bite. You can also peel the plums, but I gave up after 1 :)

Heat the oil in a pot. Coat each piece of fruit in flour, then coat it thoroughly in the batter and place it in the hot oil. Fry, turning constantly, until golden. Remove to a paper towel. Sprinkle with the sugar mixed with cinnamon and serve with vanilla ice cream.

Enjoy!
