## Ingredients

- 300 ml honey
- 300 g sugar
- 350 g butter or margarine
- 300 ml heavy cream
- 1 ½ kg all-purpose flour
- 1 ½ tbsp ginger
- 1 ½ tbsp cinnamon
- 1 tbsp cloves
- 1 tbsp baking powder

## Instructions

These are Swedish gingerbread cookies (pierniczki). I've had this recipe for a good 8 years, and it comes from the IKEA website :) Could there be anything more Swedish? ;) The given amount makes about 500 cookies.

Editing to add some new information:

These cookies are very aromatic. Right after mixing, the dough seems impossible to keep "working with" because it's quite runny. But after resting overnight, as the recipe says, it becomes elastic. All you need to do is knead it lightly after taking it out of the bowl and flour it well. It cuts out nicely then, and working with this dough goes pretty quickly.

These cookies don't spread or change shape when baking, so they're perfect for cutting out all kinds of shapes. They also take impressions of various patterns very well.

After baking, they are slightly hard and rather crisp.

**Directions:**

Mix the butter, honey, sugar and spices. Whip the cream and slowly add it to the mixture. Dissolve the baking powder in a small amount of water and add it to the dough. Gradually add the flour until the dough reaches a firm consistency. Cover the dough with plastic wrap and put it in the refrigerator. The next day, roll the dough out thin and cut out the cookies. Bake on a baking sheet at 175°C (345°F) for about 10-15 minutes, or until they turn golden.

Enjoy!

I'm planning to make pepparkakor for the holidays, but I have no idea where to buy molasses. Would a store like Tesco have it?

Unfortunately, I don't know where in Poland you can buy molasses. I'd guess Tesco or Real should have it. Otherwise, golden syrup could work, although it's already lighter, or some other dark syrup.
