## Ingredients

- 300 g smoked bacon
- 2 cloves garlic
- 200 g frozen spinach
- 400 g tagliatelle (ribbon pasta)
- 2 egg yolks
- 1 egg
- 1 cup grated Parmesan + some for sprinkling
- salt
- pepper

## Instructions

A simple midweek pasta dish. Spinach and bacon are such a great pair. If I want to make it a bit lighter, I replace the bacon with finely diced smoked ham.

Pasta with Spinach and Bacon

**Directions:**

Dice the bacon and fry it, then add the chopped garlic and spinach. Cook over low heat, stirring constantly.

Cook the pasta al dente in salted water, set aside a cup of the cooking water, and add the pasta to the spinach. Add the egg yolks and the egg and 1 cup of Parmesan, and mix. If it gets too thick, add a few tablespoons of the pasta cooking water. Season with salt (carefully) and plenty of pepper. Serve sprinkled with Parmesan.

Enjoy!

My mom sent me this recipe, and I don't know its exact source.

I´m sure, but it's one cup total, including the part for sprinkling on top at the end. I'm fixing it now.
