## Ingredients

- 4 potatoes
- about 400 ml thick sour cream, 10%
- 300 g quark (cheesecake-style twaróg)
- salt
- pepper
- garden cress or chives, about ½ bunch
- 2 cloves garlic
- 4 herring fillets
- ground paprika
- lemon juice

## Instructions

A big hunk of potato like this is a classic at many German pubs. Foil-baked potatoes, with or without herring, are my safe go-to dish when the choices are some questionable soup and who-knows-what-else, or when there's no choice at all. I know a potato in foil will be edible, even if not necessarily diet-friendly.

My favorite version is the basic one: a potato with sauce and a salad. M. likes his with herring, so that's the recipe I decided to share with you today. Instead of herring you can use, for example, cooked shrimp, or use both.

Foil-baked potatoes with herring

The potatoes for this dish should be the floury kind that cook soft. They should also be about the same size so they can be served at the same time. Young potatoes can be eaten with the skin on.

Potatoes prepared this way are perfect as a side for meat or fish, but they're also great with just a salad. You can make them in the oven, in a campfire or on the grill. Since I'm always short on time, I first parboil them lightly and then bake them.

Foil-baked potatoes with herring

I use unsalted herring fillets. If you have salted herring, don't forget to soak it before using.

## Instructions – Foil-Baked Potatoes with Herring:

Wash the potatoes and scrub them well, then parboil them in salted water. Preheat the oven to 220°C (430°F).

Brush 4 pieces of aluminum foil with oil. Wrap each potato separately in foil and place them on the middle rack of the oven, directly on the rack. Bake for about 20-30 minutes, depending on the size of the potatoes. Potatoes that haven't been parboiled will need about 45 minutes or longer.

Meanwhile, make the sauce. Mix the sour cream with the quark, season with salt and pepper, and add the crushed garlic, red paprika and ¾ bunch of chopped chives. Cut the herring into small pieces and add it to the sauce. Add lemon juice to taste and mix.

Place the potatoes on plates, cut open the foil and fold it back. Cut each potato slightly and open up the top. Spoon on the sauce, sprinkle with the remaining chives and serve.

Enjoy!
