## Ingredients

- 250 g flour
- 1 tbsp olive oil or sunflower oil
- 100 ml water
- 1 tsp salt
- 200 g crème fraîche
- salt
- pepper
- 1 garlic clove (or more)
- your favorite herbs
- 200 g cooked ham, cubed or cut into strips
- ½ onion
- or
- 1 jar olives
- about 10 sun-dried tomatoes, soaked in olive oil
- optionally feta or shredded cheese

## Instructions

Sun and spring! You have no idea how happy I was to come back home. Like most of you, I spent Easter surrounded by snow and cold. And here? Here there's beautiful sunshine, birds going wild with joy, and flowers in the gardens. I won't pretend it's very warm, but I've forgotten all about winter jackets.

I'm also happy that I could eat something other than holiday dishes. I always look forward to them, but still, I return to normal, simple food with great pleasure.

Flammkuchen

Flammkuchen is exactly this kind of simple food. It's a simple, "poorer" version of pizza that I love making, usually for dinner. Just like with pizza, you can put whatever you like on a Flammkuchen. I chose olives and sun-dried tomatoes, plus ham and onion.

## Instructions – Flammkuchen:

Knead the flour, salt, oil and water into a smooth dough. Divide it into 4 portions and roll each one out into a thin round.

Preheat the oven to 220°C (430°F).

Mix the crème fraîche with salt, pepper, garlic pressed through a garlic press, and your favorite herbs, and spread it over the dough rounds. Arrange the pieces of ham and onion, or the olives and chopped sun-dried tomatoes, on top, optionally sprinkle with cheese, and bake for about 10 minutes, until the crust turns crispy. Don't overbake it, though, because it will get too hard.

Enjoy!

Well, sort of, just really thin.

I've had the traditional version twice, but yours with the little tomatoes and olives is making me want to try it :-)
You're so lucky you have access to creme fraiche, I only get it when I'm in Germany and bring some back with me. Total nonsense... :-(

The nice thing about Flammkuchen is that you can put on whatever you want. It's good with tuna too, but I think I like it best with olives and tomatoes :) It's weird that creme fraiche is so hard to get, but maybe try making it yourself (strange that I don't have the recipe on the blog yet): pour 200g of heavy cream and 2 tablespoons of buttermilk into a jar, close it, mix, and leave it in a warm place (77°F) for 24 hours. The recipe is from here http://www.kuriositaetenladen.com/2010/09/creme-fraiche-selbstgemacht.html

Thanks for the recipe, I'll definitely try it.
In Poland I substitute thick 30% sour cream for the cf. You've got to make do somehow :-)
