## Instructions

I don't know about you, but at my house it's time to stock up the pantry a little. We're not making a lot this year, but it will be enough for a few weeks :) This weekend M. started a batch of lightly salted cucumbers (małosolne, similar to half-sours) in a clay pot, while I packed roasted bell peppers into jars and made cornichons and cucumbers in mustard (recipes coming soon). I can't wait to taste everything. Even more so because it's my first time making cornichons and roasted peppers.

cornichons

Do you have a tried-and-true way of making cornichons? I made mine following my mom's instructions.

**Directions:**

Add the vinegar, salt, sugar and bay leaves to the water and boil the brine for about 15 minutes. Wash the cucumbers and place them in jars. Slice the carrot into rounds. Between the cucumbers in each jar, tuck 2 peppercorns, ½ tsp mustard seeds, 2 allspice berries, 1 garlic clove, 1 small dill umbel (flower head), a piece of horseradish about the size of your pinky finger cut into pieces, and 6 slices of carrot. Pour the brine over the cucumbers until they are covered. Screw on the lids and pasteurize. I pasteurize mine in the oven for about 20 minutes at 150°C (300°F) (no longer, or the cucumbers will be too hard). After that time, I take the jars out of the oven, tighten the lids and turn the jars upside down to cool.

Enjoy!

**Additional info:**

It's important to choose small cucumbers for cornichons. The smaller they are, the tastier they'll be.
