## Instructions

In the last few weeks I've baked so many sweet cakes, doughnuts and other treats that I finally got a craving for something lighter. After a good dinner, this salad was a wonderful dessert for the whole family. It was a must, especially since there are so many delicious citrus fruits in the stores right now, and I'm taking advantage of this goodness as much as I can. I like citrus best fresh, not processed. I eat grapefruits with a teaspoon, and mandarins disappear by the kilo. I save some of them for later in the form of [mandarin, apple and banana marmalade](https://flowers-recipes.com/mandarin-apple-and-banana-marmalade/). And on yogurt… On yogurt they taste wonderful.

**Instructions:**

Peel the orange and the grapefruit thickly to get rid of all the white pith, then cut the flesh out from between the membranes (segment the fruit). Catch the juice in a bowl. Peel the mandarin thoroughly as well and slice it into rounds. Wash the kumquats and slice them too.

Put all the cut fruit into the bowl with the juice, add the orange liqueur or orange syrup and mix well.

Mix the two yogurts together. Scrape the seeds out of the vanilla bean and stir them into the yogurt along with the honey.

Spoon the yogurt into 4 glasses or small bowls and top with the fruit. Chop the pistachios and sprinkle them over the fruit, decorate with chocolate and slices of star fruit, and serve.

Enjoy!
