## Instructions

I'm sitting here sick, thinking up new dishes. It's definitely a lot more fun to dream up menus than to wrestle with paperwork. Even packing up all my belongings in boxes doesn't scare me as much as all these forms, cancellation notices, etc. We're moving in a month. There are a few fewer posts now, but as I already wrote, I'll do better.

Churros

The kitchen is still running, though, and last weekend was sweet and nostalgic, because I decided to make a dessert I had on vacation in Spain: churros. They're a traditional Spanish fried dessert that you can buy at street stalls, served with hot chocolate. They're eaten at any time of day, but most often late in the evening, when everyone heads home after a good time out. I remember their amazing smell while I waited for them in line.

My favorite is rolled in cinnamon sugar, but my kids enjoyed them with the chocolate too. Give them a try, especially if you don't have an idea yet for Tłusty Czwartek (Fat Thursday)!

Churros

If you're looking for more inspiration, I recommend oponki (Polish fried dough rings), [donuts](https://flowers-recipes.com/donuts-doughnuts-p-czki-donaty-or-p-czki-with-a-hole/), faworki (crispy fried pastry ribbons) and pączki (Polish filled doughnuts).

## Directions – churros:

Pour the water into a saucepan, add the butter, sugar and salt, and bring to a boil. Remove from the heat and add the flour, then stir until the dough starts to pull away from the sides of the pot. Set aside for a moment to cool slightly and transfer to the bowl of a stand mixer. Beat on high speed and add the eggs one at a time, waiting until the previous one is mixed into the dough. The dough should be uniform and smooth.

Transfer the dough to a piping bag fitted with a large star tip. Cut parchment paper into long strips and pipe a strip of dough onto each one. You can put the dough in the freezer for 20 minutes, but I didn't have room. Chilling it a bit is enough. In the meantime, heat the fat in a pot or deep fryer until quite hot and fry the churros only a few at a time. Meanwhile, flip them over so they brown evenly. I find it easiest to fry them by laying the churros on the oil paper side up and holding on to a corner of the paper. Once the oil gets under the paper, the churros peel off by themselves. Place the fried churros on a paper towel and roll them in cinnamon sugar. Serve while still warm with the chocolate sauce.

**Chocolate sauce:**

Pour the milk into a saucepan, add the chocolate and heat, stirring, until the chocolate melts. You should end up with a slightly thick sauce.

Enjoy!

The perfect snack for chocoholics :) Instead of chips and dip, crunchy churros and chocolate sauce! :)

Yum. I've never had them, but I'll pass the idea along to my pastry chef :)

This smells like the calm of Spain. Breakfast with grandparents spending whole mornings in little cafés.
Even though I lived in Spain, I never made churros! You've shamed me :)

Great idea, they must be delicious!

They look delicious, and I think they're quick to make. How can you make a chocolate like that, only in different flavors?
