## Ingredients

- fat for greasing the pan
- breadcrumbs for the pan
- 5 eggs (size M)
- 250 g sugar
- 1 packet vanilla sugar
- 150 g ground hazelnuts
- 200 g all-purpose flour
- 75 g sweetened instant cocoa powder
- 30 g unsweetened cocoa powder
- 1 packet baking powder (about 2 heaping tsp)
- 180 ml sunflower oil
- 180 ml sparkling mineral water
- 100 g dark chocolate
- 15 g solid vegetable shortening

## Instructions

I call it chocolate bubble cake because you need water with bubbles to make it, meaning sparkling mineral water. It makes the cake wonderfully fluffy. I've already made it several times for different occasions and I still haven't gotten tired of it. I have to admit, though, that it didn't always work out for me. The first time I used a pan that was too small, and the batter flowed out of it while baking so much that I could barely contain it. Luckily it worked out in the end, and I was able to serve the cake.

The second time it was unfortunately worse, because I beat the batter for too long and it became very runny. As a result, the cake didn't bake through. I wouldn't want my troubles to discourage you from making it, though.

My only goal was to draw your attention to the size of the pan and how long you mix, and the cake will reward you with a wonderful aroma, texture and lightness. It's perfect for any occasion, whether it's a husband's or a child's birthday, a farewell at work, or even Easter and Christmas. It only depends on the decoration.

Chocolate Bubble Cake

## Directions - chocolate bubble cake:

Preheat the oven to 190°C (375°F). Grease a loaf pan with fat and coat it thoroughly with breadcrumbs, including the sides of the pan. This will keep the batter from possibly flowing over.

Beat the eggs, sugar, vanilla sugar and a pinch of salt on high speed for about 8 minutes. Mix the nuts, flour, both kinds of cocoa and the baking powder together, then fold them into the egg mixture. Slowly pour in the oil and mineral water and mix into the batter only briefly, just until combined, no longer. The batter will be quite liquid, but it should still be slightly stretchy. It shouldn't be like water.

Fill the prepared pan with batter no more than ¾ full. If there's too much, it will flow out of the pan. Just in case, I recommend placing parchment paper or a baking sheet under the pan. Put it in the oven on the middle rack. After 5 minutes of baking, reduce the temperature to 160°C (320°F) and bake for about 1 hour and 15 minutes or 1½ hours. If the cake starts browning too much, you can cover it with aluminum foil. Toward the end of baking, test it with a toothpick. If the toothpick comes out dry, the cake is done. Take it out of the oven and leave it in the pan for 20-30 minutes. Carefully remove it from the pan and set it on a rack to cool completely.

Meanwhile, prepare the glaze. Chop the chocolate and melt it together with the vegetable shortening in a double boiler. Let it cool slightly, then pour the glaze over the cold cake. Set aside until the glaze sets, and serve.

Enjoy!

It looks delicious. Though moist rather than fluffy, but maybe that's just a wrong impression.

The impression is definitely a good one. It's moist, but not dense, it's fluffy and light.

Is this sweet cocoa necessary? Or could I just increase the amount of unsweetened cocoa and add a bit more sugar? Or not add sugar and use cola instead of water?
- **flowerek (Author)** · 2015-08-15 11:59
Honestly, I have no idea whether you can replace the sweet cocoa with unsweetened. I think so, but the taste might be a bit different, maybe more intense and cocoa-y. As for the cola, there are cakes made with cola, so there shouldn't be a problem, but the taste will definitely be different. I'm curious how those modifications turn out. Please let me know in a few words when it's done :)
