## Ingredients

- 4 cups all-purpose flour
- 2 large eggs
- 5 tbsp thick sour cream (I used plain yogurt)
- 3 tbsp oil
- a pinch of salt
- ¾ cup lukewarm water
- about 1 kg pitted sour cherries (depending on size)
- sugar (to taste)
- optional: cinnamon
- sour cream + sugar for serving

## Instructions

I wondered whether I should share a recipe for such a well-known and popular dish, but I decided it was worth it. And for two reasons: first, cherry pierogi (Polish filled dumplings) taste amazing, and I don't think they're all that popular after all; second, the dough in today's recipe is incredible. Back when I posted my favorite pierogi dough recipe, I was sure it was the best one. Now I have a new recipe for a super elastic, tender dough that almost rolls itself out. It's perfect for everyone who doesn't like rolling out dough. After cooking, the pierogi stay tender and thin, as long as you don't cook them for too long. The longer they cook, the tougher they get.

I see that lately I've been using Bajaderka's recipes a lot again. [This one is hers too.](http://www.mniammniam.com/Ciasto_na_pierogi-1704p.html)

**Directions:**

Sift the flour into a bowl or onto a work surface, make a well in the middle and crack the eggs into it. Then add the sour cream, oil and salt. Mix everything together, then knead the dough, gradually adding the water. The dough should be soft, elastic and easy to work with. Cover it with a bowl and set aside for about 10-15 minutes.

Mix the cherries with the sugar and optional cinnamon and set aside. Bring salted water to a boil in a large pot.

Divide the dough into 4 parts. Cover three of them with a damp kitchen towel until you're ready to use them. Roll out the fourth part thinly and cut out circles with a drinking glass. Place a teaspoon of cherries on each circle and shape the pierogi, that is, fold the dough over and pinch the edges together. Drop a few at a time into the pot of boiling water and cook only until they float to the top. Serve drizzled with sour cream mixed with sugar.

Enjoy!
