## Instructions

I have something for all you pasta lovers. These are my favorite cannelloni. Writing this blog made me dust off the recipe a bit, because I hadn't made it in ages. What a shame! After the holidays I'll definitely come back to this recipe, and then I'll add a photo too.

This dish may take a little time to prepare, but if you buy no-boil cannelloni, it will go a tiny bit faster. Then again, what wouldn't we do to delight our taste buds?

This recipe comes from the internet. Unfortunately I don't know exactly where from, because I've had it for 7 years and the page has gotten a bit worn. Time to write it down again in the depths of the internet.

These ingredients make about 4 servings.

**Ingredients:**

* 1 kg fresh spinach (you can use thawed and drained frozen spinach instead, but I don't know exactly how much)
* salt
* pepper
* 300 g gouda cheese
* 5 onions
* 4 cloves garlic
* 8 tbsp butter
* 2 tbsp capers
* 1 can tomatoes (850 g)
* a little sugar
* 1 tbsp herbes de Provence
* 20 cannelloni tubes

I use no-boil cannelloni. If yours are the kind that need cooking, remember to do that now.

Clean and wash the spinach, then blanch it in salted boiling water until it just barely softens. Drain it, squeeze out any remaining water and chop it finely. Peel and finely chop the onions and garlic. Chop the capers too, and grate the cheese on the coarse side of a grater. Lightly mash the tomatoes with a fork.

Heat 4 tbsp of the butter in a pot, add the garlic and half of the onions and cook until translucent. Then add the spinach, capers and half of the cheese. Season lightly with salt and generously with pepper, mix everything well and take the pot off the burner.

Simmer the rest of the onions in the remaining butter, add the tomatoes (with their juice) and let them cook for a moment. Blend, then season with salt, sugar and the herbs.

Preheat the oven to 200°C (400°F) and grease a large oven-proof dish. Stuff the cannelloni with the spinach mixture (I stand a tube upright on a cutting board and fill it from the top with a small teaspoon). Then arrange the tubes in the dish, packed tightly next to each other. Pour the tomato sauce over them and sprinkle with the remaining cheese.

Bake for 40 minutes.
