## Instructions

I thought I was done with asparagus for this year, but I made one more thing. Just look at this salad! Could anyone possibly skip it?

asparagus and strawberry salad

I had been planning to make it for quite a while, but either there were no strawberries yet, or there was no occasion. Recently, though, it just so happened that I had all the ingredients, so I had to make it. I served it with grilled chicken.

I love balsamic glaze, and even more so together with strawberries. Combined with asparagus, it made a salad with an interesting flavor.

The recipe comes from the magazine "Lust auf Genuss" 5/2011. I made half the portion, using only white asparagus.

asparagus and strawberry salad

**Ingredients:**

(serves 4)

* 500 g each of white and green asparagus
* 1 vanilla bean
* 1 tsp lemon juice (I used 3)
* sugar
* salt
* pepper
* 12 strawberries (about 300 g)
* 2 tbsp canola oil
* 2 tsp balsamic glaze (I used more)
* a little chervil for garnish (I used thyme flowers)

Wash and peel the asparagus (the white ones completely, the green ones only in the lower part) and cut off the woody ends. Then slice them lengthwise into thin strips (you can use a vegetable peeler).

Cut the vanilla bean in half lengthwise and scrape out the seeds. Toss the asparagus with the vanilla seeds, lemon juice, sugar, salt and pepper, and set aside for 15 minutes.

Meanwhile, wash the strawberries, cut off the stems, and cut them into quarters.

Drain the asparagus, but don't pour out the liquid it was soaking in. Instead, whisk it together with the oil.

Arrange the asparagus and strawberries on a platter or individual plates, and drizzle with the dressing and the balsamic glaze. Garnish with chervil and, if you like, a vanilla bean, and serve.

Enjoy!
