## Ingredients

- 7 cm piece of ginger
- ½ organic lemon
- 1 cinnamon stick
- 2 star anise pods
- 4 cloves
- 1 l apple juice
- 30 ml elderflower syrup
- 250 ml hard cider (apple wine)
- rum, optional

## Instructions

Huh, you probably have everything ready for Christmas already, or at least planned out. I suspect most of you have a long day in the kitchen behind you, just like me. It's nice to sit down comfortably on the sofa and treat yourself to something to unwind :)

Apple punch is the perfect "unwinder." It's sweet, aromatic and simply delicious. Made without alcohol, even the kids will love it. It warms you up wonderfully, so you can pour it into a thermos and take it along sledding :)

Apple Punch

**Since this is my last post before Christmas, I'd like to wish you a wonderful Christmas with your loved ones, lots of health and smiles, and simply some peaceful moments.**

## Directions – Apple Punch:

Peel the ginger and cut it into thin slices. Scald the lemon, grate the zest and squeeze out the juice. Put the ginger, lemon juice and zest, cinnamon, star anise and cloves in a pot, pour in the apple juice, elderflower syrup and cider, and bring briefly to a boil. Simmer for 10 minutes, add rum if you like, and serve. I also added a teaspoon of pomegranate seeds to each cup.

Enjoy!
